Ingredients:

1/2 cup flour

1 teaspoon Épices en folie Tellicherry Peppercorns, ground

1 teaspoon herbes de Provence

1 teaspoon Épices en folie Lemon Rosemary Sea Salt

1.5kg chuck roast

1 onion, coarsely chopped 

3 carrots, cut into rounds

3 potatoes, peeled and cubed

1 ½ cups beef broth 

15 oz can diced tomatoes

½ cup Olives en folie Balsamic Vinegar

Try:

     - Modena 25 Star Dark Balsamic

     - Espresso Balsamic Vinegar

     - Chocolate Balsamic Vinegar

Crusty bread, to serve

Directions:

In a large bowl mix together the flour, Lemon Rosemary Sea Salt, herbes de Provence and Tellicherry Pepper. Rub the roast with 1 – 2 tablespoons of the flour mixture and reserve the rest.  

Place the roast in your crock pot and top with the vegetables. 

Add a little of the beef broth to the flour mixture and stir, adding more broth until a thick paste forms. Add the rest of the beef broth to the flour mixture, as well as the diced tomatoes and your chosen Balsamic Vinegar. Stir well.

Pour the mixture over the roast and cover.  

Cook on low for 8 hours or on high for 6 hours.  

Once ready, add salt and pepper to taste, then serve with crusty bread.

1/2 tasse de farine

1 c. à thé de poivre noir – Tellicherry d’Épices en folie, moulu

1 c. à thé d’herbes de Provence

1 c. à thé de sel de mer au citron et romarin d’Épices en folie

1.5 kg de rôti de mandrin

1 oignon, haché

3 carottes, coupées en rondelles

3 pommes de terre, pelées et coupées en cubes

1 ½ tasses de bouillon de bœuf  

15 oz boîte de tomates en dés

½ tasse de vinaigre balsamique d’Olives en folie

Suggestions :

     - Modène 25 étoiles foncé

     - Vinaigre balsamique à l’espresso

     - Vinaigre balsamique au chocolat

Pain croustillant, pour servir  

Méthode :

Dans un grand bol, mélanger la farine, le sel de mer au citron et romarin, les herbes de Provence et le poivre noir Tellicherry

Frotter la viande avec 1 – 2 c. à soupe du mélange de la farine. Garder le reste du mélange.

Déposer la viande et les légumes dans la mijoteuse.

Ajouter 2 c. à soupe de bouillon de bœuf au mélange de la farine et remuer. Ajouter plus de bouillon de bœuf, une cuillère à soupe à la fois, jusqu'à ce qu'une pâte épaisse se forme.  Ajouter le reste du bouillon de bœuf, les tomates et le vinaigre balsamique. Bien mélanger.

Verser dans la mijoteuse.

Couvrir et cuire à chaleur élevée environ 6 heures ou à chaleur douce environ 8 heures, jusqu’à ce que la viande se défasse à la fourchette.

Rectifier l’assaisonnement et servir avec du pain croustillant.
